Steamed Mussels are one of our favorite appetizers and our mussel recipe is easy to prepare. We used Johnny’s Blue Maine mussels which we are very familiar with since we lived in Maine for many years.
2 pounds fresh mussels. de-bearded and cleaned
3 tablespoon olive oil
3 garlic cloves, pressed through garlic press
1/2 teaspoon red pepper flakes
1 can diced tomatoes
4 green onions, thinly sliced
1.5 cups white wine
Start by washing your mussels you can watch a Video Here.
Begin by heating the olive oil on medium heat once hot add green onions, garlic, salt and red pepper flakes and turn down to medium heat and sweat the veggies for 5 minutes. Add the tomatoes and white wine and bring to a simmer.
Add a steamer basket to your pot and then pour the mussels into the basket (the basket holds the mussels above the tomato mixture.
Turn your heat to high and steam until the mussels shells open about 4-5 minutes. Remove mussels and place in a large serving bowl.
Then pour the tomato stock over the mussels in the large bowl.
Serve immediately with toasted crostini bread.
After eating the mussels from this dish we saved the juice to reuse it in our Seafood Stew (Coming Tomorrow).
