So this weekend I was asking on Twitter if anyone had a good Pumpkin Latte Recipe. I had lots of people re-tweeting me and asking for the same recipe. (still looking for one by the way) I couldn’t get pumpkin out of my head…tis the season I guess. So I started looking in the kitchen cupboards and my husband had a brainstorm of an idea. So we started pulling out our ingredients and we ended up making this killer “Pumpkin Pie Spice Caramel Corn” with RAW pumpkin seeds.
Pumpkin Pie Spice Caramel Corn Recipe
¾ cup Kernel Season’s popcorn
2 tbsp Kernel Season’s oil
Air pop the popcorn if you you’d like to use less fat.
8 tbsp butter
1-cup brown sugar
¼ cup corn syrup
¼ tsp salt
¼ tsp baking soda
½ tsp vanilla
1 tsp pumpkin spice (or make your own below)
¾ can pumpkin puree
½ cup raw pumpkin seeds
Kernel Season’s Kettlecorn (optional)
¼ tsp cinnamon
¼ tsp allspice
¼ tsp ginger
¼ tsp nutmeg
Popcorn: If you don’t have an air popper heat oil in a pot. Add one kernel to the pot once it begins to sizzle then add the rest of the popcorn. Stirring and shaking frequently after the popcorn has popped add it to a large bowl.
Caramel: Preheat oven to 400’. Melt butter in a pan and then add the brown sugar, corn syrup and salt. Stirring continuously and bring to a boil. Once it starts to boil add the pumpkin spice, pumpkin seeds and cayenne. Continue stirring.
WARNING: THIS NEXT STEP IT SPLATTERS AND THIS IS HOT SUGAR SO BE CAREFUL.
Let it boil for about 1 min, (SPLATTERS) then add the pumpkin continue stirring until the pumpkin dissolves into the caramel then add the baking soda and vanilla.
Continue boiling for about 1 min longer then drizzle over popcorn while tossing gently with 2 spatulas.
Line your sheet pan with parchment paper and place popcorn on the pan, spread evenly.
Stir every 15 minutes, after bringing the popcorn out of the oven for the first stirring we sprinkled it with kettlecorn shaker.
Bake between 30-45 minutes, this depends on if you want crunchy popcorn or chewy popcorn.
