Meatless Monday: Part 2

By now, you’ve probably heard of the Meatless Monday movement that is sweeping the country (and even the world). You may have even tried it, but do you really know all the benefits of a vegetarian diet?

For starters, most vegetarians will tell you that they are amazed at the different types of foods they eat since giving up meat. It’s easy to throw on a chicken breast or eat hamburger after hamburger when you’re hungry, but what about when you don’t eat those things at all? You have to be creative, which in turn leads to a much more interesting diet.

In addition, you’ll probably find yourself eating more fresh fruits and vegetables. Instead of making meat the center of your plate, you can eat a fresh and healthy medley of vegetables or a crisp salad that will fill your plate. At first you may be feel hungry all the time, but eventually you’ll see that fruits and vegetables are in fact, very filling, and if you’re not full, you can just eat some more. While you can eat too many calories of meat or chicken, you’ll have a really hard time eating way too many vegetables. Try it, you’ll see.

Now, how about health benefits of eating little to no meat? It’s no secret that vegetarians are generally healthier than those who eat meat at every meal. They consume less saturated fat and more fiber and nutrients. Vegetarians live longer, and are also much less likely to be overweight.

Vegetarians are also less likely to get food borne illnesses and most food poisoning originates from meat and animal products.

Eating mostly fresh foods as opposed to meat based meals also means you’ll be able to get dinner on the table much faster. Vegetables cook much faster than most meat products and if your broccoli is undercooked you can still eat it; can’t say the same thing for chicken.

You may not be ready to give up meat all together and that’s okay. In fact, that’s the point of Meatless Mondays; you can see the benefits by giving it up just one day a week, and more and more people are starting to see the benefits and reducing their meat consumption even more.

So if you haven’t tried it, go ahead. You’ll find lots of meatless recipes here on this blog that are creative, filling and absolutely delicious. You’ll try new and exciting flavors you’ve never tried before and foods you may never have thought you’d be eating. But the results will shock you, please you and may even make you wonder why you didn’t try something like this sooner.
