Kale and Black Bean Salad

Kale and Black Bean Salad is a guest recipe from Karmen’s kitchen. This salad is super easy to prepare plus its healthy. The salad just makes your mouth water! Short video below!

1/2 bunch of kale
1 can of organic black beans, water discarded
1 shallot finely chopped
2 green onions finely chopped
1 cup of cherry tomatoes sliced in half
1/4 c chopped cilantro
1 tbsp dried cranberries
2 tbsp olive oil
1-2 tbsp of apple cider vinegar
drizzle of balsamic vinegar
salt to taste

Wash kale and break it into small bite size peaces, discard the stem.

 

 

 

 

 

 

 

Boil 4 cups of water and pour over kale. Cover and let it sit for 5-7 min. Strain and put back into bowl with cold water and some ice cubes to promote cooling. Let it sit for 4-5 min. Strain and dry in salad spinner.

 

 

 

 

 

 

 

 

Mix all ingredients and serve.

 

 

 

 

 

 

 

 

Refrigerate the leftovers. Makes 6 servings.
