Who doesn’t love Green Bean Casserole for Thanksgiving, but that old mushroom soup from Campbells was not doing it for us. We went on a quest a few years ago to make a homemade version that was somewhat easy to make. We have served this dish to nearly 100 people that we’ve had the honor of sharing Thanksgiving with through the last few years and we have had nothing but raving reviews. I promise once you make this easy Homemade Green Bean Casserole you will never eat that Campbell’s Soup recipe again….PROMISE!
Ingredients: 2 lbs fresh green beans, end trimmed and halved Topping Instructions: Green Beans and Mushroom Soup Blanch green bean for 6-8 minutes in salted water. Cool by running cold water over the hot green beans. Put on a sheet pan lined with paper towels the beans need to dry. In a stock pot add butter and when foaming subsides add mushrooms and onions and a pinch of salt. Saute stirring occasionally till liquid evaporates. Add flour and stir frequently. Slowly add stock and stir to mix. Slowly pour in cream while stirring constantly. Simmer on low heat until desired consistency. Remove pot from the heat and add the green beans stirring gently not to break up the beans. Add green beans to a greased 9×13 Pyrex pan. Shallot Topping Once Shallots are sliced thin then break them up into separate rings. Combine flour and potato flakes season with salt and pepper. Toss shallots with oil and then with flour mixture. Line a sheet pan with foil and then grease the foil. Spread the shallots out on the sheet pan and bake on top middle rack in a 400′ oven until lightly browned. Sprinkle over green beans. 1 lbs baby bella (crimini) mushrooms, stems removed, caps sliced 1/4 inch thick
3 garlic cloves minced
