We have been making this green salad recipe for a long time. It’s a Kale Seaweed Salad! A few months ago I was hunting on twitter for a some seaweed salad recipes. A lady responded back from Canada where they cultivate their own seaweed. She was very generous and sent me some seaweed to try.
I received the seaweed and of course needed to learn a little bit about how it would work with my recipe. It took us a few tries to get it right! The amazing part about this seaweed is that it grows once you place it in water. Watch the video you’ll see it grow! It kind of reminded me of those sponges or wash clothes that were in small packages and grew a 1000x their original size.
I struggled with the #GreenLove theme this month and I just so happened to post a blog post and Vegan Yack Attack was nice enough to bring it to my attention that my latest blog post fit the theme. Thanks again Jackie!
Let’s move on to the recipe.
1 bunch kale
1/2 cup seaweed
large clove roasted garlic
1.5 tbsp ginger, minced
2 tbsp soy sauce
1/4 cup pimentos (roasted red pepper)
sesame oil for pan
splash rice wine vinegar
1 tbsp toasted sesame seeds
