Here is the recent homemade eggnog recipe that I used from Cook’s Illustrated. This time of year I really enjoy a nice hot Eggnog Latte. Don’t get me wrong I love to drink eggnog too. I decided I wanted to try making some homemade, so I went searching for a recipe.
What got me on this kick of making homemade eggnog? I was invited to participate in an event that required me to make something with eggnog. With the eggnog recipe below you can drink it with alcohol or without.
1 egg yolk
1/4 cup sugar plus 1tbsp sugar
1/8 tsp salt
2 cups milk
1/3 cup dark rum
1.5 tsp vanilla
1/4-1/2 tsp fresh grated nutmeg
1/4 cup heavy cream, whipped
1. Combine the eggs, egg yolk, sugar and salt in a heavy bottom pot. Whisk to combine, add 1/2 cup of milk at a time and continue whisking after each addition until all the milk is incorporated.
2. Place on the stove on the lowest heat and stir constantly until it thickens and registers 160′ degrees on a thermometer about 25 minutes. After cooking then strain eggnog into a large bowl stir in the dark rum, vanilla and nutmeg. Place in the refrigerator for a few hours to cool.
3. Just before serving whip the heavy cream to soft peaks and then incorporate into eggnog. To serve pour in a glass and top with fresh nutmeg.
